Creamy Shroom Potato Pie Recipe: A Hearty Delight in a Single Pot

Ingredients:

  • 1 pound of potatoes, peeled and thinly sliced
  • 8 ounces of mushrooms, sliced (use your favorite variety)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of spinach, chopped
  • 1 cup of shredded cheese (cheddar or Gruyère work well)
  • 1 cup of milk
  • 1 cup of vegetable or chicken broth
  • 3 tablespoons of all-purpose flour
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • Fresh herbs (thyme or rosemary) for garnish

Instructions:

Start by preparing all your ingredients. Peel and slice the potatoes thinly, chop the onions, mince the garlic, and slice the mushrooms. Having everything ready will make the cooking process smooth and enjoyable.

In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onions and minced garlic, sautéing until they become translucent and fragrant. Add the sliced mushrooms to the pot, allowing them to cook down and release their moisture. Season with salt and pepper to taste.

Once the mushrooms are golden brown, add the thinly sliced potatoes and chopped spinach. Sprinkle the flour over the vegetables, stirring well to coat them. This will help create a creamy texture for the pie. Gradually pour in the milk and broth, stirring continuously to avoid lumps.

Allow the mixture to thicken and come to a gentle boil. Once the sauce has thickened, stir in the shredded cheese until it melts and combines with the other ingredients. Preheat your oven to 375°F (190°C). Transfer the pot to the preheated oven and bake for 25-30 minutes or until the potatoes are tender and the top is golden brown. Keep an eye on it to prevent burning.

Remove the pot from the oven, sprinkle fresh herbs on top for a burst of flavor, and let it cool slightly before serving. Scoop out a generous portion, and enjoy the creamy goodness of your One-Pot Creamy Shroom Potato Pie!
